Liz runs Under the Sun Farm southeast of Topeka, Kansas. Her days move between the hens, the garden, the cattle, and the ground that holds it all together.
Why this farm works the way it does
Care is part of the work.
The hens eat only organic feed and have daily access to pasture. In the garden, Liz uses biodynamic and organic practices that work with natural systems and build topsoil with varied organic material.
That means looking beyond a single harvest: caring for the soil, making room for local biodiversity, and improving the ground rather than using it up.
